Amy’s Rocky Road Recipe

Rocky Road is one of my most requested baked goodies, and it doesn't actually involve any baking at all, infact the closest it gets is boiling a pan of water.

Despite the lack of oven use in my take on Rocky Road, it would seem that mixing a load of chocolatey goodness together goes down very well, particularly in an office environment!

So grab the chocolate bars and make yourself this deliciously sweet treat:
Ingredients:
800g Milk Chocolate
200g White Chocolate
3 Mars Bars (165g)
4 bags Maltesers (78g)
2 Kit-Kats (90g)
90g Mini Marshmallows
75g Cornflakes
1 tbsp Peanut Butter (preferably smooth)
Method (step-by-step images at the end!):
1. Line a brownie pan with grease proof paper/ baking parchment and set aside.
2. Cut the Mars Bars in half lengthways and then into chunks. Do the same with the Kit-Kats. Spread out half of them across the base of the brownie pan, do the same with half of the Maltesers.
3. Break the milk chocolate into pieces and melt using a double broiler, or in a pyrex dish set ver a pan of boiling water.
4. Mix the cornflakes and mini marshmallows into the melted chocolate and then add in the remaining Mars Bars, Maltesers and Kit-Kat pieces and mix in.
5. Tip the mixture into the brownie tin and spread out evenly.
6. Break up the bar of white chocolate and melt in the double broiler. Add the peanut butter and mix in well. Pour over the top of the brownie pan and spread evenly.
7. Leave in a cool place to set until firm. Cut into small squares (a little goes a long way!) and refrigerate to harden further.
8. Dig in!
